blooming and baking

 I can't remember the name of this dwarf shrub in the front garden but I am inthralled with her blooms!

We have been busy baking for Mother's Day! These are our go to coffee cake blueberry muffins.

(One of my helpers thought I wasn't looking!)

Blueberry Coffee Cake Muffins
-recipe adapted from Barefoot Contessa-

12 tablespoons of butter (at room temperature)
1 1/2 cups of sugar
3 eggs (at room temperature)
1 1/2 teaspoons of vanilla
1/4 cup milk
1/2 cup of sour cream
1/2 cup of vanilla yogurt

2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups of blueberries

-Preheat the oven to 350 degrees and place paper liners in your muffin pan.
-In your mixer beat the butter and sugar for 5 minutes until fluffy.  With your mixer on low slowly add the eggs, vanilla,  milk, yogurt, and sour cream.
-Now add your dry ingredients and fold your blueberries in with a spatula.
-Bake for 25 to 30 minutes or until lightly brown and a toothpick comes out clean.

  1. "pot of happy" - yes it is! You garden is looking pretty spectacular - still ahead of us but things are beginning to green up here now and the weather is July-like!
    I'm drooling over 'blueberry coffee cake muffins' - blueberries, coffee, cake, AND muffins - TOGETHER!! Hubby is going to faint when he hears of this!

  3. It didn't really take too long for your garden to wake up! You have so many lovely flowers right now. The false indigo is really beautiful but I am really drawn to white flowers right now. Have fun at the tea party :)

  9. Happy mother's day Nicole!! I am going to make your muffins this morning, only I don't have sour cream or pudding so I will use greek yogurt, and I don't have blueberries but I do have a can of peaches, should be fine...hahahahaha!

  10. Oh man, seeing your Baptisia reminded me that mine didn't come up this year. Boooo. I LOVE that plant! FYI, they HATE to be moved, so make sure you have it where you want it. :o)
    I was JUST telling my mom yesterday that I want a Tiarella. I saw some at the nursery yesterday, but they were too spendy. I need to find them in smaller pots. They are so dang pretty!
    The whole garden is looking so good. Well, what I can see of it anyway. :O) I'm so glad spring has sprung in your neck of the woods!
    Those muffins sound amazing and they're goin' on the short to-make list at my house. YUM!

  13. Love the tiarella. They are so fluffy and pretty and sparkly and so difficult to photograph. I have Candy Striper in a little river of plants, but can never get a good shot of it!

    The dwarf plant looks a little but like a rhododendron ? I dunno, similar looking anyway to ones I have. I'm loving the first two plants there too! Loving how spring is showing its face in the garden :) any recommendations for good fence covering plants that are perennial and full sun?

  29. Everything is looking so pretty outside your house, Nicole. Those Blueberry Muffins really look good. I printed the recipe(I hope that is okay). I have noticed that some bloggers ask readers not to print their recipes. Is it okay to use frozen berries. I have some from last season in the freezer. My bushes are full now, so I will wait if I have to. Otherwise, I will go ahead and make with frozen. Thanks for sharing!
