Baking...
We have been busy baking for Mother's Day! These are our go to coffee cake blueberry muffins.
(One of my helpers thought I wasn't looking!)
Blueberry Coffee Cake Muffins
Blueberry Coffee Cake Muffins
-recipe adapted from Barefoot Contessa-
Ingredients 12 tablespoons of butter (at room temperature)
1 1/2 cups of sugar
3 eggs (at room temperature)
1 1/2 teaspoons of vanilla
1/4 cup milk
1/2 cup of sour cream
1/2 cup of vanilla yogurt
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups of blueberries
-Preheat the oven to 350 degrees and place paper liners in your muffin pan.
-In your mixer beat the butter and sugar for 5 minutes until fluffy. With your mixer on low slowly add the eggs, vanilla, milk, yogurt, and sour cream.
-Now add your dry ingredients and fold your blueberries in with a spatula.
-Bake for 25 to 30 minutes or until lightly brown and a toothpick comes out clean.

ReplyDeleteI was JUST telling my mom yesterday that I want a Tiarella. I saw some at the nursery yesterday, but they were too spendy. I need to find them in smaller pots. They are so dang pretty!
The whole garden is looking so good. Well, what I can see of it anyway. :O) I'm so glad spring has sprung in your neck of the woods!

ReplyDeleteLove the tiarella. They are so fluffy and pretty and sparkly and so difficult to photograph. I have Candy Striper in a little river of plants, but can never get a good shot of it!

The dwarf plant looks a little but like a rhododendron ? I dunno, similar looking anyway to ones I have. I'm loving the first two plants there too! Loving how spring is showing its face in the garden :) any recommendations for good fence covering plants that are perennial and full sun?

ReplyDeleteEverything is looking so pretty outside your house, Nicole. Those Blueberry Muffins really look good. I printed the recipe(I hope that is okay). I have noticed that some bloggers ask readers not to print their recipes. Is it okay to use frozen berries. I have some from last season in the freezer. My bushes are full now, so I will wait if I have to. Otherwise, I will go ahead and make with frozen. Thanks for sharing!
