Baking...
We have been busy baking for Mother's Day! These are our go to coffee cake blueberry muffins.
(One of my helpers thought I wasn't looking!)
Blueberry Coffee Cake Muffins
Blueberry Coffee Cake Muffins
-recipe adapted from Barefoot Contessa-
Ingredients 12 tablespoons of butter (at room temperature)
1 1/2 cups of sugar
3 eggs (at room temperature)
1 1/2 teaspoons of vanilla
1/4 cup milk
1/2 cup of sour cream
1/2 cup of vanilla yogurt
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups of blueberries
-Preheat the oven to 350 degrees and place paper liners in your muffin pan.
-In your mixer beat the butter and sugar for 5 minutes until fluffy. With your mixer on low slowly add the eggs, vanilla, milk, yogurt, and sour cream.
-Now add your dry ingredients and fold your blueberries in with a spatula.
-Bake for 25 to 30 minutes or until lightly brown and a toothpick comes out clean.
Have a wonderful Mother's Day everyone!
"pot of happy" - yes it is! You garden is looking pretty spectacular - still ahead of us but things are beginning to green up here now and the weather is July-like!
ReplyDeleteI'm drooling over 'blueberry coffee cake muffins' - blueberries, coffee, cake, AND muffins - TOGETHER!! Hubby is going to faint when he hears of this!
Happy mother's day!
Yum Nicole.....your muffins look delicious! I have saved your recipe to use for my next baking day x
ReplyDeleteIt didn't really take too long for your garden to wake up! You have so many lovely flowers right now. The false indigo is really beautiful but I am really drawn to white flowers right now. Have fun at the tea party :)

ReplyDeleteOh your garden is looking so pretty, I got a box full of plants for Mother's Day.
ReplyDeleteJeepers! You have been busy in the garden. Lots of great colour. Those muffins look delicious too. They would not last long in our house. Have a great week lovely! xo
ReplyDeleteHappy Mothers Day!
ReplyDeleteHappy mother's day Nicole!! I am going to make your muffins this morning, only I don't have sour cream or pudding so I will use greek yogurt, and I don't have blueberries but I do have a can of peaches, should be fine...hahahahaha!
ReplyDeleteLove that you are growing peas! My grandmother loved the pea plant!
Have a great day!
Oh man, seeing your Baptisia reminded me that mine didn't come up this year. Boooo. I LOVE that plant! FYI, they HATE to be moved, so make sure you have it where you want it. :o)
ReplyDeleteI was JUST telling my mom yesterday that I want a Tiarella. I saw some at the nursery yesterday, but they were too spendy. I need to find them in smaller pots. They are so dang pretty!
The whole garden is looking so good. Well, what I can see of it anyway. :O) I'm so glad spring has sprung in your neck of the woods!
Those muffins sound amazing and they're goin' on the short to-make list at my house. YUM!
I'm off to spend the day with my mom and sister (the dads have planned something secret) and hope you have a PERFECT Mother's Day!
Wow, Nicole! Your garden is looking amazing! Thanks for sharing all the natural beauty with us, especially those of us with less green thumbs :)
ReplyDeleteLoved the picture of your baking helper...my helpers are often caught in the same sampling crime. Wishing you a wonderful mother's day!
Those are beautiful garden pictures! I especially like the begonias.
ReplyDeleteLove the tiarella. They are so fluffy and pretty and sparkly and so difficult to photograph. I have Candy Striper in a little river of plants, but can never get a good shot of it!
ReplyDeleteSuch beautiful flowers coming up in your gardens! Love that false indigo and foam flower (must look them up in my garden store!). Your little helper is adorable, but I can't tell from the photo if he is 'adding to' and 'taking away from' the muffin batter ;) Hope you had a great Mother's Day. Wendy
ReplyDeleteyour garden's looking so pretty already. I love those peas: they look so ready to climb that trellis :)
ReplyDeletebeautiful colors, happy to see what false indigo looks like-thank you for the recipe
ReplyDeleteBeautiful garden, Nicole. Hope you had a relaxing and lovely Mothers Day. :)
ReplyDeleteThe garden is looking so lush and beautiful!
ReplyDeleteHappy Mother's Day Nicole ;) I hope it was extra sweet!!!
Your muffins look sooooo dang good!
The dwarf plant looks a little but like a rhododendron ? I dunno, similar looking anyway to ones I have. I'm loving the first two plants there too! Loving how spring is showing its face in the garden :) any recommendations for good fence covering plants that are perennial and full sun?
xoxo
Your garden must look gorgeous with all these beautiful blooms!
ReplyDeleteBelated Happy Mother's Day. I love the shot of your little kitchen helper. Your garden is coming along so nicely Nicole! I love the Foam Flowers and wish mine was looking a bit more promising.
ReplyDeleteHey Nicole, sorry I haven't popped by for a visit sooner... where on earth does the time go? I am so loving your garden - it is looking fabulous and that false indigo and the white bloom you don't remember the name of... Superb!!! Hmmm, blueberry muffins fresh from the oven... OK, I'm coming over for tea and muffins! :D
ReplyDeleteHugs and enjoy your week,

ReplyDeleteOhhh I am LOVING your Garden!! I am going to write down the names of your plants and go to a local nursery and see what would thrive here!! Thanks so much for sharing! I really love the false Indigo! They are all so pretty! And the muffins look so good! We will have to make some, and I love how your little helper is digging in...that is very familiar to me!!! Hugs Nicole!
ReplyDeleteHappy late Mother's Day, Nicole - I have no doubt your day was wonderful! And, the flowers in the garden are gorgeous - I have to live vicariously through you! Hope your week ROCKS - XOXOXOXO Tanya
ReplyDeleteEverything is looking so pretty outside your house, Nicole. Those Blueberry Muffins really look good. I printed the recipe(I hope that is okay). I have noticed that some bloggers ask readers not to print their recipes. Is it okay to use frozen berries. I have some from last season in the freezer. My bushes are full now, so I will wait if I have to. Otherwise, I will go ahead and make with frozen. Thanks for sharing!
ReplyDeleteIsn't spring great when all of the flowers start popping up and showing off their blooms. You have some great varieties in your yard. I haven't even got my peas in the ground yet! Going to copy this recipe for sure. We love blueberries around here!
ReplyDeleteYour gardens look great and I love your "pot of happy". What a sweet way to put it - brings a smile to my face just thinking about it. Isn't it fun to watch everything bloom and turn green? So glad spring is at last here to bring us such joy.
ReplyDeleteCindy

Love your tiarella and azalea! Your pot is very colorful - what a nice combination of flowers.
ReplyDeleteThanks for your note Nicole. I'm glad the magazine arrived, I was a bit nervous it might overwhelm the combined efforts of the Canadian and U.S. postal systems.
